Breasts of chicken slowly and lightly poached in broth with herbs and black peppercorns; five minutes before they were completed I placed a thick slice of Stilton cheese on top of each so they melted slowly and ate them with new potatoes in butter and baby asparagus. It was DELICIOUS - and very Italian!
