Four guests, completely unexpected!
Organic beef with chilli and the ubiquitous kidney bean addition, wrapped in corn (not wheat) tortillas, and baked in the oven until crisp, then they are to be coated with cheese.
I had an interesting conversation with an Italian chef yesterday, in his restuarant kitchen, who told me that what ever anybody says or writes in cookbooks, the cheese should never be added to a pizza, whilst in the oven.
Armed with this information, I shall coat the dish at the last minute with cheese as opposed to baking it.
A very good insider tip, from a genuine Italian who leafed through yesterdays paper with me for quite a while, before declaring very loudly "Look Martin`s ex girfriend is in the paper!" to his clients.( and very dashing she looked too!)
