Pork medallions in barbecue sauce, new potatoes and sweetcorn.
I find it very usefull to keep whole pieces of pork in the freezer, slice it up, fry it with smoked paprika, and you have a quick dish for when you are in a rush.
It is also quite handy to pick at, from the fridge and is better than crisps!
