Sorry, SM, I havent seen the photo but i have to disagree.
You splash the fat over the egg to cook the yolk quicker so it is done before the white turns rubbery, so if it is already overdone, wouldn't it be more so?

And there is no such thing as too much fat in fried bread. The more fat the better!
And you can sod off with your flora! Butter or lard only!
