I work a lot in Morocco myself these last few years,but would never have the time to get to know the place like yourself.
I don't mind the food,and was very surprised to find their cuisine classed as one of the world's great cuisines by a French chef.
Still it is easy to be fed well and diversely without having to eat the local stuff...found a few good Italian places.
