It is a genetic thing, like having wet or dry ear wax and being able to roll your tongue or not. You cant change it, although the bitter taste only appears if you overcook them, so if it is just the bitterness, lightly steam or fry them.
(I am a dry eared, tongue rolling sprout lover)

Yes and I wonder whether or not that effect is actually beneficial to our bodies.

I think you raise an important point about the unconscious bias demonstrated by so many in their diets, in particular by so called Christians around Christmas.
Sprouts have as much right to be masticated as anything else. And I love them!
(Although Mrs Wyot is not so keen on the, cough, effect the piles I eat can have on me later in the evening...)
