Solihull Exile I've got a dacha,really just a village house and out buildings in a beautiful forested valley.I dry/hang anything there.The electric bills in the west are extortionate,you probally pay more in a year than my village house is worth.Well you do if you pay over a grand a year.
Talking of which it's walnut harvest time.Got 2 trees,so any recipies concerning these will be gratefully recieved.
Mart We dry our duck and mushrooms with a low fan oven and the door open here, works well.
Solihull Exile It's not easy to make Peking Duck properly.
I've had better results in cheap take aways more often than in upmarket chineese resturants.
The real thing is actually just the crispy dried skin,not the meat,but as with all things hybrids can taste very nice.
Best one I had was in a private chineese family house in Bangkok.Lots of Chineese emigres settled in Thailand,and made enough money to invest some of it in preserving the famous dishes of their ancestors for prosperity.
They say the best Indian food is in England,and I'm sure 50 plus years of Communism has done as much for Chineese food as it has for Ukraine/Russian.Continuity is everything for cuisine,loose it and it's very hard to start up again.
Funny thing but I picked up some imported Hoi Sin Sauce in Moldova,and actually make a very serviceable version myself,with local Duck,shot in the wild.You've got to leave it to hang first,then dry it out,normally with a hair dryer!

Huge fillet steak in green peppercorn sauce followed by tiramusu!

I often find Peking duck dissapointing, depending on the bird and the restuarant, it is one of the only dishes I often go for the veggie option on where they use deep fried gluten instead of duck meat.
Probably inevitably very bad for you but irresistable.

Every time the name Heston is mentioned, I glance through the diary looking for a few days to spend by the Hinds Head, the waiting list for the Fat Duck I assume is still very long.
JK2006 When I was in Peking (years ago) I had the worst Peking Duck I'd ever eaten.

But the restaurant Heston went to looked magnificent. I'm almost thinking of flying there just to eat it.

And his eventual Peking Duck Meal was terrific (and almost too much for him).

Great TV too.
