An easier answer than I thought it would be.
Jimmy Page suddenly appearing on stage during the Robert Plant set for Knebworth in 1990.
I hated the gig, far too packed and hurded around was I, and nobody really knew Jimmy would suddenly appear.

Listening to Ball's Belters Sunday (what was all that Helvetica Bold insanity, Michael?) - Jennifer Holliday and And I Am Telling You... I remembered seeing it for the first time as David Geffen's guest at the premiere of Dream Girls on stage on Broadway.
About three quarters in (it closed the first act) I turned to Geffen, said "Oh fuck", rose cheering to my feet as did the entire audience, and reckoned it the single greatest moment I'd ever seen on stage.
But the single greatest performance was when I saw Michael Jackson moonwalk for the first time at the Motown anniversary celebration concert in Los Angeles... stunning.
