I do like them rare but admit this was a little bit TOO rare. Delicious though; bones and carcass bubbling on stove now - make terrific soup. I simmer for about 24 hours until the bones crumble; then sieve; add stock cubes and herbs, onions, garlic, potatoes; great nourishing winter soup.
