Mart There`s a pidgeon in there now!

I first tried this the other week, and am looking forward to recreating the dish.(Pidgeon breasts wrapped in bacon)
What a strange texture it is, Mrs Mart thought I had bought some calves liver.

Flying red meat was not something I thought existed.

Mart ..It`s not a surprising flavour at all, to the extent of which I think a lot of us have eaten it before, under the guise of "meat madras" and the like.
This of course gives the chef the ability to use whatever meat is available by his supplier.
It was instantly familiar.
One of my food heroes ,Pat Chapman, mentions often in his book "use lamb ,mutton or goat", so you get the picture.

Basically, some parts of it are like lamb, some are tougher like mutton but all of the cuts I have out- class cheap lamb, they are also much redder.
It`s a meat that`s probably too expensive to appear in the big supermarkets, goats seem to be largely bred for cheese and milk both of which are marginal markets.
Mart Hmmmm...
"Get the sheep ,out, out for the slaughter" works.

"Pull the carrots screaming from the ground", also.

"Food" the concept album! lol


"oooh oooh mushrooms on the side".

The possibilties are endless.

steveimp Blimey and all I ate tonight was home made cottage pie made with organic lamb and potatoes! (Plus it was also very easy to turn the leftovers into baby food for our 8 month old!)

So come on, what does goat taste like.......?
