My understanding of the Toby carvery is that there isn't much waitressing work going on. The entire business model is based on a buffet system whereby you go along the buffet pick your own veg, then ask the carvery person to cut the meat(s) of your choice. They have a buffet in order to reduce staff and cut costs.

The real idiots are the job agency, who put the young lady in for the job.
Bar work is very busy, and banter with customers goes a long way. You will be on your feet throughout the shift. Not forgetting to carry drinks to the table or the desserts, whilst kids are running around. So the lady would have to go to enter hot kitchens, if there are tricky customers, they can blow up in your face over the smallest thing. It would send the poor girl into an over-sensory overload.
This would be before the noise of screaming kids or drunken birthday parties started. Carrying dirty plates is not pleasant either.
Ms Clark, who lives with partial sight and hearing loss. Any breakages will come out of the company's pocket. Serving the wrong beer/lager glass in a branded beer glass is a no-no.
