Dining cars are old hat and not good/econmic use of rolling-stock space. Most of us don't go on trains to be entertained and food served at one's seat (as in planes and the Eurostar) is more than adequate - if the quality is satisfactory.

Disagree. Trains now are much more modern and smooth - slam doors are a thing of the past. In Surrey, Connex (a French company) had a large part of the franchise until about six years ago when they lost it because of an awful service; now new trains, like the Gatwick Express, provide a puntual and efficient service with new stock. Further afield, Virgin Rail's railstock is even better/smoother (a full cup of coffee on the table in front of you will not spill!) - although fares can be on the high side.
