Well, it's more of a soup but I made it tonight in memory of TB.

Fry chopped onions, garlic, ginger and sticks of lemon grass in a pan with olive oil.
When golden add chunks of thinly sliced potato.

Then a can of coconut cream.

Black pepper, sea salt, two Knorr chicken stock cubes.

Chopped up chicken breast chunks.

Mushrooms broken into bits.

Sugar snap peas in their pods.

Simmer for five minutes on low heat.

Drink chilled iced white Sancerre (for Pru).
