Delicious - an experiment that worked; stove top casserole.

Cut two large potatoes into square small chunks - about an inch wide and thick.
Boil for about ten minutes.
At the same time poach two chicken breast fillets in water.

Removed breasts and cut them into similar size and shape chunks.
Don't worry if the chunks are not cooked in the middle - they will cook in the sauteing process.

Put potatoes drained and chicken chunks into olive oil with a chicken stock cube, ground black pepper, salt and allow to cook for five or ten minutes.

Meanwhile put a dozen cherry tomatoes into hot olive oil for that time, during which they will soften and break up.

Sieve the juice of the tomatoes into the chicken and potatoes and stir around.

Serve with fresh coriander on top and drink an ice cold white wine or (like me) alcohol free cider.

It was fantastic!

King's stove top chicken, potato and tomato casserole.

We just bought and ate M+S Sushi.

There`s not enough in the packet, it`s gorgeous.
