Brilliant recipe adapted from Maddhur Jaffrey last night.
Chicken and mango in coconut and tomato sauce.
Try and seek out a product made by Maggi for your coconut milk instead of buying a whole tin of it which is too big unless you have a crowd coming around or intend to eat it for a week.
It is essential that the mango is unripe, it ripens in the sauce and should be thrown in at the last minute, apart from that, it`s a normal curry recipe.
Today I`m marinating a whole Ricotta cheese in chilli and wet garlic, which will be baked in the oven for half an hour until it builds a slight crust, which will be served with griddled fennel salad, followed by strawberries and cream.
One last thing, on the alcohol free beer note, Tesco do 2 litres of shandy at only 49p.
Why do we have to pay full "alcohol duty" prices for low and non toxic beer?( Kaliber etc)
Must be a huge profit in that.
