So the lady would have to go to enter hot kitchens, if there are tricky customers, they can blow up in your face over the smallest thing. It would send the poor girl into an over-sensory overload.

This would be before the noise of screaming kids or drunken birthday parties started. Carrying dirty plates is not pleasant either.

My understanding of the Toby carvery is that there isn't much waitressing work going on. The entire business model is based on a buffet system whereby you go along the buffet pick your own veg, then ask the carvery person to cut the meat(s) of your choice. They have a buffet in order to reduce staff and cut costs.
