We've touched on this before but making my famous (with my friends - they say it is the best in the world) bread sauce and popping in my secret ingredient (cloves) and being strangely reminded of Downton Abbey - I thought I'd mention other favourites...
Coriander - yes I'm afraid I've always loved it.
Cinnamon - delicious.
Aromat (can't live without it)
Worchestershire Sauce.

I had a Vesta Beef Risotto last night. I used to loves these about 40 years ago. I din't know they still made them until I saw them on the shelves of Morrisons, (along with the Vesta Chow Mein). I bought one to see if it was as tastey as I remembered it. I sorry to admit it was! I might try another one...in 40 years time.
I love Rosemary wrapped around legs of lamb and studded with garlic cloves ( the smell when roasting !!! )
Coriander to finish any curries is a must ( fresh chopped )
When baking fish I find shoving some herbs inside can be really good and drizzling with Olive Oil. Depending on the fish the herb. Flat leaf parsley is pretty good.
Most supermarkets do fresh herb plants now and most small indie supermarkets have bunches of herbs and chillies.
Growing your own chillies is fun as well ( seeds March and then you get a load of chillies in about July/August ) You can do it on a windowsill if it is sunny and warm.
