A recipe 6 Years, 6 Months ago  
Top quality Olive Oil; heat it, add chopped shallots and sliced potatoes; fairly soon turn down heat to a simmer; add several crushed cloves of garlic. After about 5 minutes, add chopped chicken breasts and diced frankfurters. Add a Chicken Stock cube. Stir well. Put the lid on. After another 5 minutes add pineapple chunks and peas. Stir frequently. Allow to simmer for 5 mins. Serve with an ice cold Tsing Tao beer.

I am a bit confused about recipes like these.
I dont use garlic myself, but I gather that it was traditionally used to zhuzh up bland peasant food.
Doesn't it overwhelm the flavour of milder foods like chicken breasts? Would you be better with thighs?
(this is the case with tarragon and hing)

I love garlic but not too much; the dominant flavours in this were, strangely, the frankfurter and the pineapple. It's a question of balance. Like so much in life. As I get older I start to think, like good manners, that balance is an essential, not a luxury.
