Egg over cooked...should have splashed some of the cooking fat over the yolk to get rid of that 'orrible white residue on the top.
Far too much fat in the fried bread...gently use a Flora oil spray or similar and just lightly baste the bread...then gently fry....and if I find you're using those 'Herby' sausages I will refuse to ever visit you at breakfast time....I may have to pop over to Chez Hedda instead

What's for lunch?

Sorry, SM, I havent seen the photo but i have to disagree.
You splash the fat over the egg to cook the yolk quicker so it is done before the white turns rubbery, so if it is already overdone, wouldn't it be more so?

And there is no such thing as too much fat in fried bread. The more fat the better!
And you can sod off with your flora! Butter or lard only!
