Really amazing how many folks in the west have never eaten natural chicken.
Had myself two seperate chicken dinners yesterday.One was Breast fillet ($3.50 kilo) and the other was a whole corn fed village egg layin' bird at $3 for the whole.
The fillet was spiced to death,then almost cremated to give it some sembelance of taste and texture.
The village bird was slowly simmered in a boquet of locally grown herbs.Hardly any real meat,as is the norm.In fact the Breast fillets would have made Twiggy a 'D' Cup candidate:laugh: but oh what flavour.
I expect those with Stateside culinary experience have eaten farmyard Chickens on their travels,but how many of us Brits can say the same?
Christmas is almost with us,think I'll shoot me a wild Duck,stuffed with Chestnuts,and served with natural sour Cherry sauce grown from my Dacha trees.Not sure about accompiniments,I'll be awaiting ideas from this board's cullinary masters:P

I'm a Sprouts man myself SE - love them though my Mum used to hate them!

So every Christmas she forced herself to eat two tiny buds whilst I scoffed dozens!

I bought two whole branches of sprouts , on the vine as it were, for Xmas.
The cashier commentented how nice they looked and I said that they were particularly nice if you trimmed the bottom two layers off and put them in a vase as floral decoration. (joking of course)

She replied that they would look rather nice decorated with electric twinkly lights.
"Don`t be silly", I said, "the electicity would short out...."

Anyways, back to duck , once again I think you should eat what is in season with it when it is eaten, but as I have an abundance of ginger and orange(obviously not local), I would still stick with that in any form as the dressing.

It occured to us last night, that I have not cooked a whole goose at home before and so today the quest begins to find one for festivities.

Sprouts,funny veg,normally we Brits just don't understand how to cook them.Hence over boiling,squashy mush puts people off them for life.Certainly my Mothers attempts did so for me.
Funny thing is that I've had Chineese people cook them for me,and they were wonderful,nothing like the norm.
I would have a few,but they're not really available here.So still searching for that elusive Xmas accompiniment.
