I grew up in the west mids,and was into Baltis before the rest of the country discovered the name.
Now Brummy council chiefs want to trademark the balti,only allowing use of the name if made within the 'balti triangle'.
One thing though,the baltis of the 70s/80s were actually very different to those of today.Early ones were cooked as many Pakistani families do it,spices swimming in oil.Now it's more like a gravy sauce.
The balti is a wok type dish,and you cook the food inside it,then use it to serve the food direct to the table.
Back in 2004 I had something similar in Sloppi,on the Turkey/Iraq border,they've been doing it for years.Does make me wonder.
