I am going to cook his langoustine rissoto. I do recall his answer in the Guardian to the question..marmite love it or hate it?..and he said "I have never tried it but I would like to!"
He certainly knows (nose)his stuff, but I do disagree with his washing of chantrelles, as by personal experiance, it makes them inflated and soggy.
And whilst on the subject of wild mushroom, i.e ceps, chanterelles etc, I normally pick quite a few down here, but this year has been a bad harvest.
When I first started this odd culinary hobby, I was allways told to leave some , so that they would spore the next autumn/winter, my fear is , that the ones that we were leaving were picked as well, thus making this rare , and excellent form of food even rarer.
But, it could be global warming who can say?
